Carrot Cake Cupcakes

What’s better than carrot cake? CARROT CAKE CUPCAKES! I found this recipe online, and the cupcakes turned out great (and just in time for Easter!).

Here’s what you’re going to need: IMG_2057

  • 1 cup vegetable oil
  • 2 cups all-purpose flour
  • 2 tsp. ground cinnamon
  • 1 3/4 tsp. baking soda
  • 3/4 tsp. ground nutmeg
  • 3/4 tsp. ground ginger
  • 3/4 tsp. table salt
  • 4 eggs
  • 2 1/2 grated carrots
  • 2 cups brown sugar
  • 3/4 cup chopped pecans
  • 3/4 cup raisins
  • 1 1/2 teaspoon vanilla extract

Mix together flour, cinnamon, baking soda, nutmeg, ginger and salt. In another bowl, mix oil, eggs, carrots, brown sugar, pecans, raisins and vanilla. Slowly add the dry ingredients into the mixture.

Bake at 350 degrees Fahrenheit for 25 minutes. After letting the cupcakes cool, frost them with cream cheese frosting and enjoy!

 

Neapolitan Cake

If you like Neapolitan ice cream, you’re going to love this recipe! I’m so happy with how this cake turned out. This Neapolitan cake is pretty and delicious.

Here’s what you’re going to need:  IMG_2027

  • 1 can chocolate icing
  • strawberry cake mix
    • 3 eggs
    • 3/4 cup oil
    • 1 cup water
  • white cake mix
    • 3 eggs
    • 1/4 cup oil
    • 1 cup water

 

 

Mix together cake mixes separately in 2 different round cake pans.

IMG_2030Bake at 350 degrees Fahrenheit for 25 minutes. After letting the cakes cool, turn over the strawberry cake and cover in chocolate icing. Place white cake on top and cover it in chocolate icing as well.

When you cut it, you can see all the colors! I thought this cake turned out so cute!

 

Healthy Onion Rings

After all the desserts I’ve made, I needed a “healthy” snack and baking is always a better alternative than frying! This recipe is easy, although it does take a little bit more time than usual!

Here’s what you’re going to need: IMG_2040

  • 1 quart buttermilk
  • 2 onions
  • 1 cup Panko bread crumbs
  • 2/3 cup flour
  • 3/4 cup ground cornmeal
  • 1 teaspoon Kosher salt
  • 1 teaspoon black pepper
  • 2 eggs

 

 

 

 

Slice onions and soak in buttermilk. Refrigerate for 4 hours.

Whisk two eggs together. In a separate container, mix together bread crumbs, flour, cornmeal, salt, and pepper. Take onions out of buttermilk, place in eggs, and coat in the dry mixture.

Bake for 30 minutes at 425 degrees Fahrenheit. These onion rings are much better for you since they aren’t fried, and they are also super tasty! Served with ketchup or Ranch, these baked onion rings are a great snack!

Homemade Brownies

I’ve never made homemade brownies before (the box kind is just so easy!). I thought I would try it for my blog, and it wasn’t nearly as hard as I thought it would be. It’s actually pretty easy, and it tastes much better than just a store bought brownie mix!

Here’s what you’re going to need: IMG_2046

  • 1/2 cup melted butter
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all purpose flower
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

 

Stir together melted butter, sugar, eggs, and vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Place batter in greased pan.

Bake in the oven at 350 degrees Fahrenheit for 25 minutes. It’s important not to overcook these brownies! After you let the brownies cool, they are great served with some vanilla ice cream!

Mini Fruit Pizzas

If you’ve been keeping up with my blog, you’ll know that I think food is just better in miniature versions, like the mini chicken pot pies I made here. These looked so pretty, and more importantly, were really tasty.

The base of the fruit pizzas is sugar cookies, which I have already provided a recipe for here.

Here’s what you’re going to need for the topping: IMG_1970

  • 12 0z Cool Whip
  • 8 oz cream cheese
  • 1 1/2 powdered sugar
  • strawberries
  • kiwis
  • crushed pineapple

 

 

Mix together Cool Whip, cream cheese (softened), and powdered sugar.

Put this mixture on the cookies first. Drain the crushed pineapple and add that next. Finally, add the cut up strawberries and kiwi. The mini fruit pizzas are so good and somewhat healthy!

Pepperoni Pasta

If you like pizza (and who doesn’t?), then you’ll definitely like this pasta bake! My sister makes it all the time, so I thought I would give it a try. You can basically just choose your favorite pizza toppings to use as your pasta ingredients.

Here’s what I used:

  • IMG_19811 box noodles
  • 2 large cans pasta sauce
  • 2 packs of mini pepperonis
  • 1 bag mozzarella cheese
  • Green pepper
  • Onion

 

 

 

 

After boiling the noodles, place them in a pan. Mix in pasta sauce, pepperonis, green pepper, and onion. Sprinkle mozzarella cheese on top.

Bake at 350 degrees Fahrenheit for about 30 minutes. It was so good, and I want to try it again with different pizza toppings!
